Grilled Roast Beef and Peppadew Pepper Sandwich

Grilled Roast Beef and Peppadew Pepper Sandwich
Makes 2 Sandwiches

1/3 cup crumbled Blue cheese
1 tablespoon mayonnaise
4 slices sourdough bread
1/4 lb. thin-sliced roast beef
3 tablespoons sliced marinated Peppadew peppers (sweet piquanté peppers)
1/2 cup baby spinach leaves
Salt and pepper to taste
2 tablespoons butter

Mash cheese and mayonnaise together in a small bowl until almost smooth. Spread mixture onto one side of each slice of bread. Top two of the slices with beef, Peppadew peppers, spinach, and salt and pepper. Arrange remaining two slices on top to make sandwiches. Melt butter in a skillet over medium-high heat. Add sandwiches and cook, flipping once, until golden brown on both sides (about 2 to 4 minutes total).
